Greek Tsatziki Sauce

Peel and grate one large cucumber
Press all or as much water out of the grated cucumber as you can in a strainer
Place one med-large container of plain yogurt (or sour cream) in bowl
Add drained cucumber to yogurt
Grate one clove of garlic and add to yogurt
Mix well
Cover and refrigerate overnight (you can eat right away but the flavors blend better if left overnight in fridge)
 
This sauce is great to use as a dip for small browned meatballs, tomato and red/green pepper wedges, crusty bread, etc.
