Thumbprint Cookies

1/2 c. packed brown sugar
1/2 stick butter
3 large eggs, separated
1-1/2 tsp. vanilla
1/4 tsp. salt
2 c. flour
2 c. finely chopped pecans
1 c. preserves or jam, your favorite flavor

Preheat oven to 350 degrees.  Lightly grease or spray cookie sheets.  Beat brown sugar, butter, egg yolks, vanilla and salt until well blended.  In small bowl, beat egg whites until foamy.  Place pecans in separate small bowl.  Scoop and roll dough into 1" balls.  Dip each in egg whites; roll in pecans.  Place on baking sheet.  Using thumb or teaspoon, make indentation on top of each cookie.  Bake cookies 8 minutes; remove from oven.  Spoon teaspoon of jam or preserves into indentation of each cookie.  Return cookies to oven, bake 6 to 9 minutes more, or until lightly browned.  Cool on wire racks.  Makes about 4 dozen cookies.
