Grilled Salmon Salad

Ingredients:

4 center cut salmon fillets, with skin on
2 Tbl. olive oil
2 Tbl. FRESH lime juice
salt & ground black pepper to taste

 

For the Salad:

2 c. pear or cherry tomatoes, halved
1/4 c. diced (about 1/4") red onion
salt & ground black pepper to taste
1 Tbl. extra virgin olive oil
1 Tbl. red wine vinegar

 

Instructions:

Place the salmon in a shallow dish to fit.  Combine the oil, lime juice, salt and pepper.  Pour over the salmon and let marinate in the fridge, covered, for about an hour (an hour is plenty) turning once.

Lightly oil the grill before preheating it.  Put the salmon on the top of the grill skin side down, for 8 to 13 min. (depending on thickness) until medium rare or to desired doneness.

Meanwhile, combine all the salad ingredients in a bowl.  Place a salmon filet in the center of each of 4 dinner plates.  Divide the salad equally atop each piece of fish.

      I halved this recipe when I made it cause I didnít need four fillets, and it came out perfect. In my opinion, you might wanna make a little more of the salad cause it was so tasty .Fresh lime juice makes a big difference
