Baked Penne

1-1/2 lb. sweet Italian sausage, cut into 1" chunks

4 garlic cloves, minced

2 large green, yellow and/or red bell peppers, cut into 1/4" slices

1 jumbo onion, cut in half and sliced thin

1 can (28 oz.) whole tomatoes in puree

1 can (15 oz.) tomato puree or crushed tomatoes

1 tea. salt

1/2 tea. pepper

1 lb. penne pasta

1 pkg. (8 oz.) fresh mozzarella cheese or 8 oz. regular mozzarella cheese, cut into small chunks

1/2 c. grated Romano cheese


In large skillet brown sausage over medium heat.  Drain and discard fat.  Add peppers, onion and garlic and sautee for 8 minutes or until vegetables are tender.  Add tomatoes, puree, salt and pepper, breaking up tomatoes.  Reduce heat to low, cover and simmer 10 minutes.  Meanwhile, preheat oven to 400 degrees.  Boil pasta according to package directions, but for 2 minutes less than called for.  Drain pasta and add to tomato mixture.  Add mozzarella cheese and mix well.  Pour into a sprayed 9 x 13" glass dish and top with Romano cheese.  Bake for 25 minutes or until bubbly.  Let stand 5 minutes before serving.
