New Orleans Pork Gumbo

1 pound pork loin, cubed
Spray Dutch oven with cooking spray; heat over medium heat. When pan is hot, add pork cubes. Cook for about 4 to 5 minutes, or until browned on all sides. Remove pork and set aside.
Add margarine to Dutch oven; stir in flour. Cook and stir
until roux is browned. Whisk in broth and remaining ingredients. Bring to a
boil; reduce heat and simmer for 15 to 20 minutes. Remove bay leaf and serve.
