Pumpkin Nut Cookies

1/2 c. shortening

1 c. sugar

2 eggs, beaten

1 c. pumpkin (canned pumpkin, not the thinner pie filling)

2 c. sifted all purpose flour

4 tea. baking powder

1 tea. salt

1-1/2 tea. cinnamon

1/2 tea. nutmeg

1/4 tea. ginger

1 c. raisins

1 c. chopped walnuts or pecans

 

Cream shortening; add sugar gradually, creaming until light and fluffy.  Add eggs and pumpkin, mix well.  Sift flour, baking powder, salt and spices together.  Stir dry ingredients into pumpkin mixture and mix until blended.  Add raisins and nuts.  Drop by teaspoonfuls on greased cookie sheets.  Bake in 350 degree oven for approximately 15 minutes.  May be frozen, these cookies ship well.
