Green Pepper Jelly

6 large green or red bell peppers, chopped
1 or 2 hot peppers (jalapeno, choice of hotness), chopped
6 c. sugar
1-1/2 c. cider vinegar
1-3/4 oz. pectin
green or red food coloring

Combine bell and hot peppers, sugar and vinegar in a large stainless steel pan.  Bring to boil.  Boil vigorously for 10 minutes.  Reduce heat and stir in pectin, skim.  Add food coloring to desired shade.  Seal and paraffin in sterile jars. 

To serve:  pour over a block of cream cheese and serve with crackers.
