I've heard this gelatin recipe called Seafoam Salad or Lime Velvet Salad, but I prefer my daughter's appellation of Green Stuff. It can be made in many different ways some of which include marshmallows, mayonnaise or cottage cheese. We prefer this one.
1 large box of lime gelatin
2 c. boiling water
1 (20 oz.) can of crushed pineapple, undrained
1 (8 oz.) cream cheese, softened
1 pt. whipping cream
1/2 c. chopped celery
1/2 c. chopped pecans
Dissolve gelatin in boiling water. Refrigerate until syrupy, about 30 to 45 minutes. Blend together pineapple, celery, nuts, and cream cheese. Whip cream to soft peaks. Using a mixer, combine cooled gelatin and pineapple/cream cheese mixture. Fold in whipped cream. Pour into 11x13" Tupperware dish or glass baking dish. Refrigerate until set or overnight.
