Crock Pot Stew

2 pounds lean stew beef
1 medium coarsely chopped onion
1/2 teaspoon seasoned salt
2 to 3 teaspoons vegetable oil
1 package Beef Stew Seasoning such as McCormick's
1 can of diced potatoes, drained 
2 cups diced carrots
1 stalk celery, cut into 1/2-inch pieces
1 small can of sliced mushrooms, drained (optional)
1 cup of frozen green peas (optional)
3 tablespoons flour
1/3 cup cold water
black pepper and  salt to taste
 
Heat oil in pan and brown beef if desired.  Cook over medium heat for about 10 to 15 minutes, until the meat is browned on all sides. (I sometimes skip this and just toss meat into crock pot). Place meat in crock pot, add the potatoes, carrots, onions,  celery, mushrooms, and peas.   Sprinkle seasoning over everything and add water to cover.

 

 Cover and cook on LOW 6 to 8 hours or HIGH about 4 hours.  To thicken the stew, about 30 minutes before serving, combine the flour with 1/3 cup cold water; add to crock pot and turn up to HIGH. Serves 8.
