Crockpot Classic Minestrone

2 cans (14.5 oz. each) low-sodium chicken or vegetable broth

1 can (15 oz.) red kidney beans, rinsed and drained

1 can (15.5 oz.) cannellini beans, rinsed and drained

3/4 tsp. dried Italian seasoning

1 pkg. (12 oz.) rotini pasta

2 cans (14.5 oz. each) diced tomatoes

6 carrots, peeled and thinly sliced

1 bunch scallions, thinly sliced

1 pkg. (10 oz.) frozen spinach, thawed and squeezed dry

 

Place broth, beans, tomatoes, carrots, scallions, and Italian seasoning in 4-quart or larger slow cooker.  Stir to combine.  Cover.  Cook on low 6 to 8 hours.  Prepare pasta according to package directions.  Add pasta and spinach to cooker and stir to combine.  Cover.  Cook 15 to 20 minutes, or until heated through.
