Crockpot Spiced Lentil Soup

1 c. lentils, rinsed

1 can (28 oz.) stewed tomatoes

2 potatoes, peeled and chopped

2 carrots, peeled and sliced

1 onion, chopped

1 rib celery, chopped

3 cloves garlic, minced

3 bay leaves

1 tsp. freshly ground black pepper

3 Tbl. curry powder

1 tsp. ground cumin

1 tsp. ground coriander

4 c. chicken or vegetable broth

 

Place ingredients in 4-quart or larger slow cooker.  Stir to combine.  Cover.  Cook on low 8 to 10 hours or on high 4 to 5 hours, or until lentils are tender.  Discard bay leaves before serving.
